End of the summer fun with food
Would you like to know of some good ways to eat vegetables? Here are some ideas on how to eat those vegetables that are so, < so good AND good FOR you - kale, green cabbage, and red cabbage!
Kale salad
Wash the kale and cut out the thick rib. Turn the leaves sideways and slice them thinly. When you are done, it will look like thin, shredded paper.
Put it all into a bowl. Dress with olive oil, lemon juice, and a little grated parmesan cheese. Try not to eat it all at once! You can get a little fancy by topping it with toasted walnuts.
Cabbage salad – not your ordinary cole slaw!
Grate green cabbage. Grate a little red cabbage. Grate some carrots. Add these to a large bowl, along with some chopped cilantro or parsley, depending on which you prefer. Isn’t it beautiful? Dress with good olive oil and a little lime juice.
Braised red cabbage
Put a little chopped onion in a dutch oven. Chop up an entire red cabbage and add to the onions. Add a little apple (1-2 chopped or maybe some applesauce) and a dash of caraway seeds. Put a little water in the pan, then cover and cook at low heat for 1 1/2 hours. (courtesy of The Joy of Cooking)
