Summer food – Vegetables! (and tea)
It is summertime, and there is nothing better than good vegetables and fruits. Here are some ways to eat vegetables that may help you both enjoy your summer and improve your health. These are delicious dishes and keep well in the fridge so you can make them ahead of time.
Cabbage slaw
1/2 green cabbage
1/4 red cabbage
2-3 carrots
Cilantro or parsley
Mix and add dressing.
Dressing: good olive oil, lime juice
optional: lightly toasted walnuts
You can add corn on the cob broken into thirds.
Fresh kale salad:
Fresh kale leaves
Remove ribs and slice the leaves thinly across into fine shreds
Add dressing and eat.
Dressing: good olive oil, lemon juice, grated parmesan cheese (or other hard cheese)
optional: lightly toasted walnuts or pine nuts
Easy grilled summer vegetables:
Chop into bite-sized pieces:
onions
green/red/orange peppers
zucchini
mushrooms
Spray lightly with oil. Grill on a grill pan (with holes in it) or use the top of a broiler pan on the grill. Grill until completely cooked (about 15-25 minutes).
Iced mint tea
Especially good for hot weather:
Grab a handful of mint from your garden (or ask your neighbor for some, as everyone has too much of it this time of year). Add it to a pot of water and simmer for 15 minutes. Chill. Drink a large glass when you feel hot.
