Summer food – fruit!

Fruits are abundant during the summer. It’s easy to grab a peach or a pear and munch away. Have a variety of fruits around that you can eat. They are perfect for snacks, but here are a few other ways you can really enjoy fruit.

Yogurt parfait
Use unsweetened plain yogurt here, as the fruit will add plenty of sweetness to the taste.
Add cut up fruits, like pears, apples, peaches, plums.
Sparkle it up with a handful of nuts like
walnuts, pecans, or almonds.
It can be made exotic with a small amount of (un)sweetened dried coconut.

Watermelon/Strawberry Sorbet
Put a bunch of watermelon in the food processor.
Add a few strawberries to the mix.
Put the whole liquidy mess into an ice cream maker and turn until you have yummy sorbet.

Enhanced summer oatmeal
Add a bunch of berries – blueberries, raspberries, blackberries –  to your morning oatmeal.
You can make a terrific oatmeal overnight. Use steel-cut (long-cooking) oats into a bowl with the correct amount of water. Add the bowl to a crock pot with a bit of water in the pot. Turn it on low overnight.
In the morning, add all of the berries for delicious start to your day.
